Kotai Collection - Kitchen Knives

Kotai was founded by Jérémie Plane, a Frenchman originally from Lille who settled in Asia. A passionate cook, he noticed that Japanese knives cut very well but require a lot of maintenance, while Western knives resist rust without holding their edge.

After years of exchanges with knife makers, metallurgists, and chefs, he created a hybrid knife. The blades are made of Japanese 440C steel or 67-layer stainless Damascus. Some models are finished in Seki, Japan, while others are assembled in Yangjiang, China.

At Outpost, the collection features chef's knives: the Gyuto, the versatile knife of Japanese cuisine, in several versions, and the Kiritsuke, with its angled tip.

It also includes a Santoku with a 180 mm blade, ideal for vegetables, and a small Damascus Bunka for precise cuts.

Why choose Kotai

  • Japanese sharpness without the demanding maintenance
  • 440C and stainless Damascus steels
  • A brand created by a Frenchman
  • Several blade shapes depending on the use
  • Everyday cooking, barbecue, and van life
